Cheese Stuffed Baked Potatoes Recipe
4 baking potatoes
1 cup low fat cottage cheese
1/4 cup skim milk
3/4 cup grated mozzarella cheese, reduced fat
1/4 cup mild salsa

Scrub the potatoes and put in a 450 degree oven. Bake until tender, 45 minutes to an hour.

Meanwhile, blend the cottage cheese and milk in the blender until they are smooth. Put into a bowl and stir in the mozarella and salsa.

When the potatoes are done and are cool enough to handle, cut them in half lengthwise and scoop out the flesh into the bowl of cheese and salsa. Mix well. Put shells on a baking sheet. Spoon the cheese mixture into the potato sheels and return them to the overn for 15 to 20 minutes, until they are brown and crusty.
